Orange Cranberry Muffins

Nummy, fruity goodness

Hello summer! Or at least that’s what your mouth will think with your first bite of these delicious muffins.  Luckily for you – after making a large batch these freeze well so you can have them morning after morning! Like them warm? Pour the patter into the muffin liners, freeze and bake on demand!

Ingredients

2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup Coconut Oil
1 1/4 cups Milk
1 large Egg
1 tablespoon Grated Orange Rind
1 cup Chopped, Dried Cranberries

Glaze:

1 Tablespoon Fresh Orange
1/2 Cup Powdered Sugar
3-7 Drops Orange Vitality EO

Now let’s start by turning that oven on to 400 degrees – be sure you have the muffin tin and liners ready too!

Start it out dry

Start by measuring out the dry ingredients
Flour, sugar, salt baking powder and soda
Sift together into a mixer or food processor

Time for GOOD fat

For adding in the coconut oil, use it in a solid state
Once measured, add it into dry goods in chunks
Use processor or mixer to combine until even/mealy

Orange Vitality!

Next wisk the milk product, egg and zest until slightly foamy on the top
Then add in 15 drops of Orange Vitality EO
Stir into dry mix just until moist

Cranberry time!

For whole, dried cranberries, chop them up in the food processor first
Then fold into the batter lightly
Pour into cupcake liners and bake for 14 mins

everyone loves Icing 

Now’s the time to mix up that yummy icing
Mix with OJ, powdered sugar and Orange Vitality to taste
Once the muffins are cooled, just drizzle on top!
