Zingy Lime Sugar Cookies

Sugar Cookies + Lime = Perfection

With Lime Vitality Oil both in and on these cookies, your tongue is bound to be dazzled by these zesty, zingy joys of awesome. This recipe calls for flour and the cookies in the photos used whole wheat pastry flour.  Use what you have and what suits your needs best!

Ingredients

1 cup Soft {not melted} Coconut Oil
1 1/2 cups White Sugar
1 Egg
1/2 teaspoon Vanilla Extract
Zest of one Large Lime
3 tbsp Fresh Lime Juice

2 3/4 cups All-Purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1/2 teaspoon Salt

2 cups Powdered Sugar
1/3 cup Fresh Lime Juice
Lime Vitality Essential Oil

Now let’s start by turning that oven on to 350 degrees and getting your cookie sheets and parchment paper ready to bake!

Get mixing!

Using a KitchenAid cream together the butter and sugar until smooth and very fluffy
You can certainly use a hand mixer or beater, but get those muscles ready!

Lime time – 3 ways

Then mix in egg, vanilla extract, lime juice, lime zest and don’t forget the best part!
Uplifting Lime Vitality EO is wonderfully aromatic- add 7-10 drops to the mix

 Why Sift?

Bring together baking powder/soda, salt and flour
Shifting ingredients helps to combine them evenly before they are mixed with other ingredients

Mix and blend

While on a low setting, gradually add dry mixture to wet
Don’t get the mixture going too fast or you’ll have a flour frenzy!

Roll and bake

Once combine, roll into small balls and then in sugar. Place 1.5 inches apart on parchment line baking sheet
These beauties only need 8-10 minutes to bake.

While baking…

Use this time to mix together the icing for the cookies. With a fork stir lime juice, powdered sugar and Lime Vitality EO to taste

Set, cool, frost

Make sure your cookies rest a bit to cool before frosting.
